# Ingredients You'll Need:

→ For the chicken

01 - 2 boneless, skinless chicken breasts, cut into bite-sized pieces
02 - 1 tablespoon vegetable oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - Salt and black pepper, to taste

→ For the rice base

06 - 2 tablespoons sesame oil
07 - 3 large eggs, beaten with a pinch of salt
08 - 1 cup diced carrots
09 - 1/2 cup diced onion
10 - 2 garlic cloves, minced
11 - 4 cups day-old cooked white rice
12 - 2 tablespoons unsalted butter, melted
13 - 2 tablespoons soy sauce
14 - 1 tablespoon lemon juice
15 - 1 cup frozen peas
16 - 2 tablespoons sliced green onions, for garnish

→ For the bang bang sauce

17 - 1/3 cup mayonnaise
18 - 2 tablespoons sweet chili sauce
19 - 1 tablespoon sriracha
20 - 1 teaspoon honey (optional, for added sweetness)

# Steps to Follow:

01 - In a large bowl, toss chicken pieces with vegetable oil, garlic powder, onion powder, salt, and pepper until evenly coated.
02 - Air fry at 400°F for 10–12 minutes, shaking halfway, or pan-fry in a skillet over medium-high heat until golden and cooked through, about 6–8 minutes.
03 - Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Pour in beaten eggs and scramble until just set. Remove and set aside.
04 - Add remaining sesame oil to the skillet. Sauté diced carrots and onions for 5 minutes until tender-crisp. Stir in minced garlic and cook for 30 seconds.
05 - Stir in day-old rice, breaking up clumps with a spatula. Let sit for 2–3 minutes to crisp slightly, then stir and repeat once.
06 - Return scrambled eggs to the skillet. Add melted butter, soy sauce, lemon juice, and peas. Stir and cook for 3–4 minutes until peas are heated through.
07 - Whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
08 - Toss cooked chicken with half the bang bang sauce. Spoon over the fried rice, drizzle remaining sauce on top, and garnish with green onions.

# Extra Tips:

01 - Use chilled, day-old rice to prevent mushy texture when stir-fried.
02 - Allow rice to crisp slightly in the pan before stirring to enhance texture.
03 - Have all ingredients prepped before cooking for best results.
04 - Bang bang sauce can be adjusted for heat and sweetness to personal taste.
