Lay out roasted sweet potatoes in serving bowls, place sliced BBQ chicken on top, and add a splash more BBQ sauce if you’re feeling it.

Coat the seared chicken breasts in BBQ sauce right there in the pan. Turn them around so every side gets sticky and caramelized.

Pour the last tablespoon of olive oil into a big pan and heat it up on medium-high. Pop in your chicken and cook both sides for 5 to 7 minutes till they're super brown and hot inside (temperature should reach 75°C).

Dry off the chicken with a paper towel, then sprinkle salt and pepper on each side.

Spread those potato cubes on a baking sheet lined with parchment. Roast in the oven for 25 to 30 minutes until they're soft and have some color.

Grab a big bowl, toss the sweet potato pieces with 2 tablespoons of olive oil plus salt and pepper. Make sure everything’s coated well.

Turn your oven on to 220°C and wait until it’s nice and hot.
