BBQ Chicken Bowls (Printable Recipe)

# Ingredients You'll Need:

01 - 4 cloves garlic, chopped up
02 - Some freshly ground black pepper, add as much as you want
03 - A few pinches of salt, sprinkle to your taste
04 - 3 tablespoons olive oil

05 - 1 cup of your favorite BBQ sauce (grab a bottle or make your own)

→ Main Ingredients

06 - 4 sweet potatoes, peeled and diced (around 600 g)
07 - 4 chicken breasts, no skin or bones (about 680 g)

# Steps to Follow:

01 - Lay out roasted sweet potatoes in serving bowls, place sliced BBQ chicken on top, and add a splash more BBQ sauce if you’re feeling it.
02 - Coat the seared chicken breasts in BBQ sauce right there in the pan. Turn them around so every side gets sticky and caramelized.
03 - Pour the last tablespoon of olive oil into a big pan and heat it up on medium-high. Pop in your chicken and cook both sides for 5 to 7 minutes till they're super brown and hot inside (temperature should reach 75°C).
04 - Dry off the chicken with a paper towel, then sprinkle salt and pepper on each side.
05 - Spread those potato cubes on a baking sheet lined with parchment. Roast in the oven for 25 to 30 minutes until they're soft and have some color.
06 - Grab a big bowl, toss the sweet potato pieces with 2 tablespoons of olive oil plus salt and pepper. Make sure everything’s coated well.
07 - Turn your oven on to 220°C and wait until it’s nice and hot.
