Cauldron Curry (Printable Recipe)

Aromatic spiced curry with coconut milk, vegetables, and choice of chicken or tofu in a warming, fragrant dish.

# Ingredients You'll Need:

→ Protein

01 - 1 pound chicken breast, cubed (or 1 pound firm tofu for vegetarian option)

→ Aromatics

02 - 1 large yellow onion, chopped
03 - 3 cloves garlic, minced
04 - 1 tablespoon fresh ginger, minced

→ Spices & Liquids

05 - 2 tablespoons curry powder
06 - 1 can (14 oz) full-fat coconut milk
07 - 1 cup chicken or vegetable broth
08 - 1 tablespoon extra virgin olive oil

→ Vegetables

09 - 1 cup potatoes, diced into 1-inch pieces
10 - 1 cup carrots, diced
11 - 1 cup cauliflower florets

→ Seasonings & Garnish

12 - Salt and freshly ground black pepper to taste
13 - Fresh cilantro leaves for garnish

# Steps to Follow:

01 - Heat olive oil in a large heavy-bottomed pot over medium heat. Add chopped onion, minced garlic, and ginger. Sauté for 3-4 minutes until onion becomes translucent and fragrant.
02 - Stir in curry powder and cook for 1 minute, stirring constantly, until spices become aromatic and slightly darkened.
03 - Add cubed chicken or tofu to the pot. Cook for 5-6 minutes, stirring occasionally, until chicken is lightly browned on all sides or tofu develops a golden exterior.
04 - Pour in coconut milk and broth, stirring well to combine with the spices and scrape up any browned bits from the bottom of the pot.
05 - Add diced potatoes and carrots to the pot. These harder vegetables need more cooking time to become tender.
06 - Bring mixture to a boil, then reduce heat to low and simmer for 15 minutes. Add cauliflower florets and continue simmering for 10-15 minutes more until all vegetables are fork-tender.
07 - Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh cilantro leaves and serve immediately while hot.

# Extra Tips:

01 - For deeper flavor, toast whole spices like cumin and coriander seeds before grinding with curry powder.
02 - Cut vegetables into uniform sizes to ensure even cooking throughout the simmering process.
03 - Coconut milk can separate during cooking - stir occasionally to maintain smooth consistency.
