Cheesy Chicken Potato Nests (Printable Recipe)

Mashed potato nests filled with juicy chicken, golden cheese, and fresh dill for a satisfying comfort meal

# Ingredients You'll Need:

→ Mashed Potato Base

01 - 500 g peeled potatoes
02 - 1 egg
03 - Salt to taste

→ Chicken Filling

04 - 1 medium onion, finely chopped
05 - 3 tablespoons vegetable oil
06 - 300 g chicken fillet, diced
07 - 1 garlic clove, minced
08 - Salt and black pepper to taste

→ Topping and Garnish

09 - 70 g hard cheese, grated
10 - Fresh dill, chopped, for garnish

# Steps to Follow:

01 - Peel and dice the potatoes. Boil in a large pot of water until fork-tender, about 15 to 20 minutes. Drain thoroughly and set aside.
02 - Heat 1 tablespoon of oil in a pan. Sauté the chopped onion until translucent. Add diced chicken and remaining oil, cook until golden and fully cooked. Add minced garlic, salt, and pepper. Cook for 1 to 2 minutes more, then remove from heat.
03 - Mash the drained potatoes until smooth. Mix in the egg and salt until creamy and lump-free.
04 - Preheat oven to 200°C. Spoon mashed potatoes into a piping bag with a large star tip. Pipe circular nests on a parchment-lined baking tray, creating a base and a rim. Alternatively, shape nests using a spoon.
05 - Fill the center of each nest with the chicken and onion mixture. Top with grated cheese, pressing it gently to adhere.
06 - Bake for 25 minutes or until the cheese is melted and golden. Remove from oven, garnish with chopped dill, and serve warm.

# Extra Tips:

01 - Use firm mashed potatoes for best shaping results.
02 - Brushing nests with oil before baking can enhance crispiness.
03 - Waxy potatoes like Yukon Gold yield a creamier texture.
