Cheesy Ground Beef Cauliflower (Printable Recipe)

One-skillet beef and cauliflower dinner with bold flavors and a cheesy topping.

# Ingredients You'll Need:

→ Main Ingredients

01 - 1 tablespoon extra-virgin olive oil
02 - 1/2 cup chopped onion
03 - 1 medium green bell pepper chopped
04 - 1 pound lean ground beef
05 - 3 cups bite-size cauliflower florets
06 - 3 cloves garlic minced
07 - 2 tablespoons chili powder
08 - 2 teaspoons ground cumin
09 - 1 teaspoon dried oregano
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon ground chipotle
12 - 1 can 15 ounces no-salt-added petite-diced tomatoes with juices
13 - 2 cups shredded extra-sharp Cheddar cheese
14 - 1/3 cup sliced pickled jalapeños

# Steps to Follow:

01 - Position rack in upper third of oven and preheat broiler to high.
02 - Heat olive oil in a large broiler-safe skillet over medium heat. Add onion and bell pepper and cook, stirring, until softened, about 5 minutes.
03 - Add ground beef and cauliflower to the skillet. Cook, stirring and breaking up the beef, until no longer pink, 5 to 7 minutes.
04 - Stir in garlic, chili powder, cumin, oregano, salt, and chipotle. Cook until fragrant, about 1 minute.
05 - Add diced tomatoes with juices. Bring to a simmer and cook, stirring occasionally, until liquid is reduced and cauliflower is tender, about 3 minutes. Remove from heat.
06 - Sprinkle cheese over the mixture and top with sliced jalapeños. Broil until cheese is melted and browned in spots, 2 to 3 minutes.

# Extra Tips:

01 - Using prewashed cauliflower saves time and prevents excess moisture in the dish.
02 - Freshly grated Cheddar offers better flavor than pre-shredded alternatives.
03 - Lean ground beef reduces grease and maintains a hearty texture.
04 - Red or yellow bell peppers can be substituted based on preference.
05 - Omit pickled jalapeños for a milder version.
