# Ingredients You'll Need:

→ Chicken Salt Chips

01 - 3.3 pounds russet potatoes, peeled
02 - 8.5 cups vegetable oil or grapeseed oil
03 - 3 tablespoons chicken bouillon powder
04 - 1 tablespoon onion powder
05 - 1 tablespoon garlic powder
06 - 1 tablespoon salt, plus more as needed
07 - 1 teaspoon white pepper
08 - 1 teaspoon brown sugar

→ Garlic Butter

09 - 1 cup butter, at room temperature
10 - 3 bulbs garlic
11 - 1/3 cup parsley, finely chopped
12 - 2 tablespoons fresh sage, finely chopped
13 - 1.5 teaspoons fresh rosemary, finely chopped
14 - 1 pinch flakey sea salt, or to taste
15 - 1 pinch black pepper, or to taste

→ Roasted Chicken

16 - 3.3 pounds chicken, spatchcocked
17 - 2 carrots, roughly chopped
18 - 2 onions, peeled and quartered
19 - 2 bulbs garlic, halved crosswise
20 - 1/2 lemon, quartered
21 - 2 sprigs rosemary
22 - 2 tablespoons olive oil

→ Chicken Gravy

23 - 1/2 cup white wine
24 - 1.5 cups chicken stock
25 - 2 teaspoons cornstarch

# Steps to Follow:

01 - Cut potatoes into chips and soak in cold water, rinsing until water runs clear to remove excess starch.
02 - Cook chips in salted boiling water for 20 minutes until fork tender, then drain and let dry on wire rack. Chill until cold.
03 - Fry chips in 285°F (140°C) oil for 8 minutes until lightly colored. Cool on wire rack and chill again.
04 - Fry chips in 355°F (180°C) oil for 4–6 minutes until golden. Drain on paper towels and season with chicken salt.
05 - Roast garlic bulbs, squeeze out cloves, and mash with butter, herbs, salt, and pepper until well combined.
06 - Melt 1/3 cup garlic butter. Rub under chicken skin, place chicken on rack over vegetables in roasting pan.
07 - Roast at 410°F (210°C) for about 45 minutes until golden and internal temperature reaches 165°F (75°C).
08 - Combine pan drippings and roasted vegetables in saucepan. Add wine, cook briefly, then whisk in cornstarch and stock. Simmer and strain.
09 - Serve roasted chicken with hot, crispy chips and pour gravy over top.
