# Steps to Follow:

01 - Slice eggplant and salt both sides. Let sit in a colander with weight on top for at least 1 hour. Pat dry before use.
02 - Heat olive oil in a saucepan over medium-low. Add garlic and sauté until golden. Stir in red pepper flakes, then add tomatoes and salt. Simmer uncovered 20 minutes. Add basil and keep warm.
03 - Combine breadcrumbs, Pecorino, parsley, and black pepper. Dredge chicken in flour, dip in eggs, then coat with breadcrumb mix.
04 - Heat oil to 365°F in a large skillet. Fry chicken in batches, 3–4 minutes per side until golden. Drain on a rack.
