01 - 1/3 cup mayonnaise
02 - 1 teaspoon Dijon mustard
03 - 2 teaspoons lemon juice
04 - 2 tablespoons finely chopped fresh thyme
05 - 3 tablespoons finely chopped fresh chives
06 - 3 tablespoons finely chopped fresh parsley
07 - 1/8 teaspoon freshly ground black pepper
08 - 12 ounces white albacore tuna, thoroughly drained

→ Sandwich Assembly

09 - 8 slices rustic French or Italian loaf bread, 1/2 to 3/4-inch thick
10 - 4 tablespoons unsalted butter, room temperature, divided
11 - 1 1/2 cups shredded fontina cheese or sharp white cheddar
12 - 1 large tomato, thinly sliced into 8 slices

# Steps to Follow:

01 - In a medium bowl, combine mayonnaise, Dijon mustard, lemon juice, thyme, chives, parsley, and black pepper. Gently stir in the drained tuna, breaking it up slightly.
02 - Spread butter on the outside of each bread slice. Flip the slices over and layer cheese, tuna mixture, tomato slices, and additional cheese on four slices. Top with remaining bread, butter side facing out.
03 - Warm a nonstick skillet or cast iron pan over medium heat.
04 - Place sandwiches in the skillet and cook for 3–4 minutes per side until the bread is golden and cheese is melted. Check the underside after 1–2 minutes and adjust heat if browning too quickly.

01 - Slice bread 1/2 to 3/4-inch thick. Too thin and it won’t support the filling; too thick and it won’t heat through properly.
