In a medium saucepan, combine cranberries, maple syrup, water, orange zest, and salt over medium-low heat.

Bring mixture to a gentle simmer, stirring frequently to prevent maple syrup from burning on bottom of pan.

Once cranberries begin bursting, reduce heat to low and continue cooking for 15-20 minutes, stirring regularly until juices thicken to desired consistency.

Remove from heat when sauce reaches slightly thinner consistency than desired, as it will continue thickening while cooling. Taste and adjust sweetener or orange zest if needed. Serve warm or at room temperature.
