01 - 1 pound skinless center-cut salmon fillet, cut into 1 1/2-inch chunks
02 - 1 tablespoon sesame oil
03 - 1/4 cup low-sodium teriyaki glaze
04 - 2 cups hot cooked brown rice
05 - 1 cup cooked shelled edamame
06 - 2 scallions, sliced
07 - 1 cup diced cucumber
08 - 1 medium avocado, sliced
09 - 2 tablespoons Sriracha mayonnaise
10 - 2 teaspoons toasted sesame seeds (optional)

# Steps to Follow:

01 - Position the oven rack in the upper third and preheat to 450°F. Line a rimmed baking sheet with foil and coat with cooking spray.
02 - Toss the salmon with sesame oil on the prepared baking sheet. Roast until the salmon is opaque on the outside, about 6 minutes.
03 - Remove the salmon from the oven and set the broiler to High. Drizzle the salmon with teriyaki glaze, toss to coat, and broil for 2 to 3 minutes until browned and crispy.
