01 - 1 lb lamb shoulder or loin, trimmed and thinly sliced
02 - 8 oz wide hand-pulled or store-bought noodles
03 - 1 medium onion, thinly sliced
04 - 1 green pepper, thinly sliced
05 - 4 cloves garlic, minced
06 - 1 tablespoon fresh ginger, minced
07 - 1/2 cup homemade chili oil
08 - 1 tablespoon soy sauce
09 - 1 tablespoon dark soy sauce
10 - 1 tablespoon Chinese black vinegar
11 - 1/4 cup fresh cilantro, chopped

12 - 1 tablespoon cumin seeds, dry roasted and ground
13 - 1 teaspoon coriander seeds, dry roasted and ground
14 - 1 teaspoon Sichuan peppercorns, dry roasted and ground

# Steps to Follow:

01 - Heat oil in a hot wok. Add lamb in a single layer and sear until browned, working in batches if needed.
02 - Add ginger and garlic to the pan and stir-fry for about 30 seconds until fragrant.
03 - Stir in sliced onion and green pepper. Stir-fry briefly to keep vegetables crisp.
04 - Sprinkle in ground cumin, coriander, and Sichuan peppercorns. Stir to bloom the spices in the oil.
05 - Pour in soy sauce, dark soy sauce, and black vinegar. Stir to coat the ingredients evenly.
06 - Add chopped cilantro and stir through for a fresh and herby finish.
