01 -
Preheat oven to 350°F. In a large skillet, cook ground beef with diced yellow onion over medium-high heat for 8-10 minutes until beef is fully browned and onions are soft.
02 -
Add minced garlic and cook for 30-45 seconds. Drain off any excess grease thoroughly. Return meat to skillet and sprinkle taco seasoning packet over everything, stirring to coat evenly.
03 -
Stir in can of Rotel tomatoes with their juices and drained Mexicorn, mixing everything together until well combined. Let simmer for 2-3 minutes to allow flavors to meld together before assembling casserole.
04 -
Spread half of seasoned meat mixture across bottom of greased 7x11 inch casserole dish. Sprinkle one cup of shredded taco blend cheese over meat, followed by half of crushed Doritos, distributing evenly.
05 -
Add remaining meat mixture as second layer. Top with remaining cup of cheese, then finish with rest of crushed Doritos, creating final crunchy layer.
06 -
Bake for 15-20 minutes at 350°F, until cheese melts completely and begins bubbling around edges. Remove from oven and let rest for 3-5 minutes before serving.
