Peel, core, and chop the apples into even pieces for uniform cooking.

Place the chopped apples in a medium saucepan. Add ground cinnamon and lemon juice.

Cover the saucepan and cook the mixture over medium heat for 12–15 minutes, stirring occasionally, until the apples are very soft.

Remove the saucepan from heat. For a chunky sauce, mash with a potato masher; for a smoother consistency, use an immersion blender until desired texture is achieved.

Let the apple sauce cool to room temperature, then transfer to an airtight container and refrigerate. Serve warm or chilled as desired.
