→ Dough

01 - 1 1/3 cups warm water (110°F/43°C)
02 - 1 tablespoon granulated sugar
03 - 2 1/4 teaspoons instant yeast (1 standard packet)
04 - 3 1/2 to 4 cups unbleached all-purpose flour, spooned and leveled, plus more as needed
05 - 2 tablespoons extra-virgin olive oil, plus more for greasing
06 - 1 teaspoon salt
07 - Sprinkle of cornmeal, for dusting pan

→ Toppings

08 - Extra-virgin olive oil, for brushing
09 - 2 garlic cloves, minced (optional)
10 - 1 cup pizza sauce
11 - 4 cups shredded mozzarella cheese

# Steps to Follow:

01 - Whisk warm water, sugar, and yeast in a mixing bowl. Cover and let sit for 5 minutes.
02 - Add flour, olive oil, and salt. Beat with dough hook or spoon for 2 minutes until dough pulls from bowl sides.
03 - Knead with mixer for 5 minutes or by hand until smooth and elastic. Add flour if too sticky.
04 - Place dough in greased bowl, cover, and let rise at room temperature for 60–90 minutes until doubled.
05 - Preheat oven to 475°F (246°C) for at least 15–20 minutes. Prepare baking sheet with grease and cornmeal.
06 - Punch dough down and divide in half. Flatten each piece into a 12-inch circle. Pinch edges to form crust.
07 - Cover dough lightly to rest. Brush olive oil, optionally add garlic, spread sauce, then top with cheese.
08 - Bake for 13–15 minutes until crust is golden brown. Slice and serve immediately.

# Extra Tips:

01 - Freeze one dough ball after first rise. Thaw overnight in fridge and bring to room temp before using.
02 - Allow dough to rest if it resists stretching. Cover and retry after 10 minutes.
03 - For a cold rise, refrigerate dough for 8–12 hours to develop flavor.
