One-skillet garlic butter chicken with corn, bacon, and herbs for an easy summer dinner.

# Ingredients You'll Need:

→ Main Ingredients

01 - 1.5 pounds boneless skinless chicken breasts or thighs
02 - 2 tablespoons extra virgin olive oil
03 - 1 tablespoon fresh chopped thyme
04 - Kosher salt to taste
05 - Ground black pepper to taste
06 - 0.25 cup all-purpose flour
07 - 4 slices thick cut bacon chopped
08 - 1 small yellow onion chopped
09 - 2 tablespoons unsalted butter
10 - 4 ears corn kernels removed
11 - 2 cloves garlic minced or grated
12 - 1 teaspoon crushed red pepper flakes
13 - 0.75 cup dry white wine such as Pinot Grigio or Sauvignon Blanc
14 - 0.5 cup heavy cream or full fat coconut milk or whole milk
15 - 0.5 cup grated parmesan or Asiago cheese
16 - Fresh basil chopped for garnish

# Steps to Follow:

01 - In a large skillet over medium heat, cook the chopped bacon until crisp. Remove with a slotted spoon and set aside.
02 - Season chicken with salt and pepper, then dredge in flour. In the same skillet, add olive oil and sear the chicken until golden on both sides, about 3 to 5 minutes per side. Remove and set aside.
03 - In the same skillet, add butter, onion, corn, garlic, red pepper flakes, and thyme. Cook for 5 to 7 minutes until corn is golden and fragrant.
04 - Pour in white wine, scraping up browned bits from the pan. Return chicken to the skillet and simmer until cooked through, about 10 to 12 minutes.
05 - Reduce heat and stir in cream and parmesan. Simmer 2 to 3 minutes until sauce is thickened slightly.
06 - Garnish with bacon and fresh basil before serving hot.

# Extra Tips:

01 - Use a mix of cream and cheese for a richer sauce or coconut milk for a dairy-free variation.
02 - Fresh corn gives the best flavor, but frozen corn works in a pinch.
