Heat a cast iron skillet over medium-high until very hot to achieve a good sear.

Add olive oil and half the steak pieces in a single layer. Sear for 2 minutes per side until crust forms. Cook in batches to avoid overcrowding.

Reduce heat to medium and add butter and garlic to the pan. Stir for 1 minute until fragrant.
