Garlic Confit Chicken Wings (Printable Recipe)

# Ingredients You'll Need:

→ Chicken Wings

01 - 4 lb chicken wings (1.8 kg)
02 - 1 tbsp baking powder
03 - 1 tbsp sweet paprika
04 - 1 tsp onion powder
05 - Salt and black pepper, to taste

→ Garlic Confit Sauce

06 - 5 tbsp salted butter (70 g), preferably Westgold
07 - 12 garlic confit cloves or 4 raw garlic cloves, minced
08 - 1/2 cup grated parmesan cheese
09 - 1/2 cup sour cream
10 - 1 tbsp olive oil
11 - Splash of water
12 - 2 tbsp finely chopped parsley
13 - Extra grated parmesan, for garnish

# Steps to Follow:

01 - Place chicken wings on a rimmed baking tray and refrigerate uncovered for at least 4 hours or overnight.
02 - Preheat oven to 250°F (120°C).
03 - In a large bowl, toss wings with baking powder, paprika, onion powder, salt, and pepper until evenly coated.
04 - Line baking tray with foil and place oiled wire rack on top. Arrange wings on the rack.
05 - Bake wings at 250°F (120°C) for 30 minutes.
06 - Increase oven temperature to 425°F (220°C) and bake for an additional 30–40 minutes until golden and crispy.
07 - In a saucepan over medium heat, melt butter. Add olive oil, garlic, and parmesan, stirring while mashing garlic.
08 - Lower heat, add sour cream and water. Stir until sauce is emulsified and smooth.
09 - Toss crispy wings in sauce. Garnish with parsley, extra parmesan, and freshly cracked black pepper. Serve immediately.
