Hot Honey Chicken Corn Grill (Printable Recipe)

Juicy grilled chicken glazed with sweet-spicy honey, hanging out with a zippy lime corn salad that pops with crunch.

# Ingredients You'll Need:

→ Hot Honey Chicken

01 - 1 garlic clove, chopped small
02 - 60 ml olive oil
03 - 1 teaspoon zest from a lemon
04 - 450 g boneless skinless chicken thighs
05 - Kosher salt and fresh black pepper, as needed
06 - 30 ml fresh lemon juice
07 - 30 ml hot honey, and some more for topping

→ Lime Corn Salad

08 - 1 tablespoon grated lime peel
09 - 2 green onions, sliced thin
10 - 6 ears sweet corn, kernels off the cob
11 - Kosher salt and black pepper, to taste
12 - 60 ml sour cream
13 - 30 ml fresh lime juice
14 - 15 g cilantro, chopped

# Steps to Follow:

01 - Pop chicken thighs into a bag or dish. Whisk together hot honey, olive oil, lemon juice, zest, garlic, salt and pepper till it’s all mixed. Cover chicken well in the sauce. Stick it in the fridge for half an hour (longer’s even better).
02 - Turn grill to high. Take chicken out of that tasty marinade and lay it right on the hot bars. Sear for 5 minutes. Flip and leave for 5–6 minutes more. Pull it off when inside’s 74°C. Let it rest a bit. Hit it with some more hot honey before you chow down.
03 - Toss corn, cilantro, and green onions in a big bowl. In another bowl, stir together sour cream, lime zest, juice, salt, and pepper till smooth. Pour this creamy goodness over the corn, mix so it all gets coated. Have a taste and fix the seasoning if you want.
04 - Dish up some chicken on plates with big scoops of that corn salad. Dig in right away.

01 - Let your chicken soak overnight if you've got time. It'll taste way better. Letting it rest before slicing keeps it juicy.
