Grilled Peach and Burrata (Printable Recipe)

Juicy grilled peaches pair with burrata, spinach, and pistachios for a fresh, vibrant summer dish.

# Ingredients You'll Need:

→ Salad

01 - 4 ripe peaches, halved and pitted
02 - 2 cups fresh spinach leaves
03 - 1 cup cherry tomatoes, halved
04 - 225 grams burrata cheese
05 - 75 grams pistachios, roughly chopped
06 - 2 tablespoons fresh dill, chopped

→ Dressing

07 - 2 tablespoons extra virgin olive oil, plus additional for grilling
08 - 1 tablespoon balsamic reduction (optional)
09 - Salt, to taste
10 - Freshly ground black pepper, to taste

# Steps to Follow:

01 - Set grill to medium-high heat to prepare for caramelizing the peaches.
02 - Brush the cut sides of the peach halves with olive oil and lightly season with salt to prevent sticking and enhance flavour.
03 - Place peaches cut-side down on the grill. Cook for 4–5 minutes until pronounced grill marks develop and the fruit begins to soften.
04 - Remove peaches from the grill and allow to cool slightly, then slice each half into wedges to maintain structure for assembly.
05 - On a large platter, create an even layer of fresh spinach and scatter halved cherry tomatoes on top.
06 - Neatly arrange grilled peach wedges over the salad base. Tear burrata cheese into rustic pieces and distribute evenly.
07 - Sprinkle chopped pistachios and fresh dill over the salad for contrasting crunch and aromatic finish.
08 - Drizzle with olive oil and balsamic reduction if using, season the salad with salt and freshly ground black pepper to taste, and serve immediately.

# Extra Tips:

01 - Select ripe but still firm peaches to ensure they hold their shape when grilled. Serve while the peaches are slightly warm for ideal contrast with the cool burrata.
02 - For a vegetarian-friendly variation, substitute burrata with fresh mozzarella or feta cheese to suit taste preferences.
03 - Grilled nectarines, plums, or apricots may be used if peaches are not available; follow the same grilling technique.
