Hatch Green Chile Stew (Printable Recipe)

Hearty stew with Hatch green chiles, potatoes, and ground beef, perfect for chilly evenings.

# Ingredients You'll Need:

→ Main Ingredients

01 - 1½ lbs lean ground beef (90/10)
02 - 5 medium potatoes, diced
03 - ½ onion, chopped
04 - 1 whole tomato, chopped
05 - 6-8 roasted Hatch green chiles, peeled and chopped
06 - 2 cloves garlic, chopped

→ Seasonings & Liquid

07 - Salt, to taste
08 - Black pepper, to taste
09 - Chicken bouillon powder, to taste
10 - 2 cups water

# Steps to Follow:

01 - Place a large pot over medium heat. Add the ground beef and break it up with a spoon while it browns evenly until cooked through.
02 - Stir in the chopped onion and cook for 5-7 minutes until the onion softens and becomes fragrant.
03 - Add the diced potatoes and stir well. Cook for another 10 minutes, stirring occasionally to prevent sticking.
04 - Mix in the chopped Hatch green chiles, tomato, garlic, salt, pepper, and bouillon powder. Stir until well combined.
05 - Pour in 2 cups of water, just enough to cover the ingredients. Bring to a gentle boil, then reduce heat and simmer uncovered for 30 minutes, stirring occasionally.
06 - Check for tenderness in the potatoes and taste for seasoning. Adjust salt, pepper, and bouillon as needed.
07 - Turn off the heat and let the stew sit for 10-15 minutes before serving. Serve hot with warm tortillas or enjoy as is.

# Extra Tips:

01 - Frozen or jarred Hatch green chiles work great if fresh roasted aren't available
02 - Mash a few potatoes in the pot for a thicker texture
03 - This stew stores well and tastes even better the next day
04 - Let the stew rest for 10-15 minutes after cooking to allow flavors to settle and deepen
