Combine chopped ginger, brown sugar, and water in a saucepan. Bring to a simmer over medium heat.

Simmer gently for 15–20 minutes, stirring occasionally, until the sugar dissolves and the ginger flavor intensifies.

Remove from heat, let the syrup cool completely, then strain into a jar and discard the ginger pieces.

Fill a glass with ice cubes. Add 3 tablespoons of the cooled syrup and squeeze in juice from half a lemon.
