Peel the boiled potatoes if not using leftovers. Use a ricer or mash them finely until smooth.

Mix in the softened butter and salt. Taste and adjust seasoning if needed.

Gently combine the sifted flour with the mashed potatoes until a soft dough forms. Do not overmix.

Transfer dough to a floured surface. Divide in half and roll each ball to 1/3 inch thickness.

Slice each rolled piece into four triangles using a large knife or cake lifter.

Heat a dry griddle or pan over medium heat. Cook farls until golden brown on both sides.
