01 - 2.5 lb chicken drumsticks bone-in skin-on
02 - 0.25 cup coconut flour
03 - 0.5 tsp sea salt
04 - 0.25 tsp black pepper
05 - 2 large eggs
06 - 1 cup crushed pork rinds (2.25 oz)
07 - 1 tsp smoked paprika
08 - 0.5 tsp garlic powder
09 - 0.25 tsp dried thyme
10 - cooking spray

# Steps to Follow:

01 - In a shallow bowl stir together coconut flour sea salt and black pepper and set aside.
02 - Crack eggs into a second bowl and whisk until smooth then set aside.
03 - In a third bowl combine crushed pork rinds smoked paprika garlic powder and dried thyme.
04 - Dip each drumstick in the coconut flour mixture then egg mixture then press into pork rind breading to coat completely.
05 - Lightly grease the basket and preheat the air fryer to 400 degrees F.
06 - Arrange chicken in a single layer spray all sides and cook until internal temperature reaches 170 degrees F.
07 - Preheat oven to 425 degrees F line baking sheet with foil and rack bake chicken for 25 minutes flip and continue 10 to 20 minutes until 170 degrees F internal temperature.
