01 - 2 (12 oz) packs beef kielbasa, sliced into thin rounds
02 - 3 large potatoes, peeled and chopped into small cubes
03 - 2 green bell peppers, cut into evenly sized pieces
04 - 1 red onion, cut into evenly sized pieces

→ Seasonings & Oil

05 - 2 tbsp olive oil
06 - Salt, to taste
07 - Black pepper, to taste
08 - Garlic powder, to taste
09 - Paprika, to taste

11 - Chopped green onions, for garnish

# Steps to Follow:

01 - Slice the kielbasa into thin rounds. Cut the bell peppers and red onion into pieces similar in size to each other. Peel, wash and chop the potatoes into small cubes to help them soften faster as they roast.
02 - Place the chopped potatoes into a large mixing bowl. Drizzle generously with olive oil. Scatter on salt, pepper, garlic powder and paprika. Toss well so every piece is coated evenly.
03 - Add the chopped peppers and red onion to the bowl with the seasoned potatoes. Drizzle in a bit more olive oil and a light sprinkle of seasoning. Toss again to make sure everything is seasoned and coated well.
04 - Spray a large sheet pan with a light coating of cooking spray. Spread out the potato and veggie mixture in an even layer. Scatter the sliced kielbasa over the top.
05 - Roast in a preheated oven at 400°F for 30 to 40 minutes. At 30 minutes check for tenderness in the potatoes and a golden color. Continue roasting up to 40 minutes until everything is caramelized and cooked through.
