Cheese tortellini and chicken in a rich, creamy parmesan sauce with sun-dried tomatoes. Ready in 30 minutes.

# Ingredients You'll Need:

→ Pasta

01 - 1 package (540 g) frozen cheese tortellini

→ Chicken

02 - 1.5 pounds (680 g) boneless, skinless chicken breasts, cut into bite-sized pieces
03 - 2 tablespoons olive oil
04 - 0.5 teaspoon ground black pepper
05 - 0.5 teaspoon Italian seasoning
06 - 0.5 teaspoon paprika

→ Creamy Sauce

07 - 2 tablespoons unsalted butter
08 - 0.5 cup sun-dried tomatoes in oil, drained and thinly sliced
09 - 3 teaspoons minced garlic (about 3 cloves)
10 - 240 ml low-sodium chicken broth
11 - 480 ml heavy cream
12 - 1 teaspoon Italian seasoning
13 - 1 teaspoon ground black pepper
14 - 1 teaspoon paprika
15 - 1 cup (90 g) Parmesan cheese, finely shredded
16 - 2 cups (60 g) baby spinach, roughly chopped

# Steps to Follow:

01 - In a bowl, toss chicken pieces with 0.5 teaspoon each of black pepper, Italian seasoning, and paprika until fully coated.
02 - Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken in a single layer and cook for 6-8 minutes, turning occasionally, until golden and cooked through. Transfer to a clean plate.
03 - Lower heat to medium-low. Add butter to the skillet. Once melted, add sun-dried tomatoes and minced garlic. Sauté for about 30 seconds until fragrant, avoiding burning.
04 - Pour in chicken broth and heavy cream. Add 1 teaspoon each Italian seasoning, black pepper, and paprika. Whisk and cook until gently bubbling. Gradually whisk in Parmesan cheese until fully melted and sauce is smooth.
05 - Return cooked chicken to skillet along with frozen tortellini and chopped spinach. Stir gently to coat all ingredients in the sauce. Simmer for 5 minutes, stirring occasionally, until pasta is tender and spinach is wilted.
06 - Remove skillet from heat and allow to stand for 2 minutes to thicken slightly. Serve immediately, garnished with additional Parmesan and chopped fresh parsley if desired.

# Extra Tips:

01 - For consistent cooking, cut the chicken into evenly sized pieces.
02 - A pinch of red pepper flakes can be added to the sauce for gentle heat.
03 - The sauce will continue to thicken as it stands; consider a splash of extra cream when reheating.
04 - Aim to serve promptly to maintain ideal texture.
