# Ingredients You'll Need:

→ Main Ingredients

01 - 4 ounces dehydrated soy curls
02 - 4 tablespoons olive oil, divided
03 - 1½ teaspoons kosher salt, divided
04 - 1½ teaspoons ground black pepper, divided
05 - 1 teaspoon garlic powder
06 - 1 small white onion, diced
07 - 1 pound baby bella mushrooms, roughly chopped
08 - 6 cloves fresh garlic, minced
09 - 1 tablespoon all-purpose flour
10 - 2½ cups vegan beef broth or vegetable broth
11 - 2½ cups unflavored and unsweetened nondairy milk
12 - 1 cup dry marsala wine
13 - 1 pound short pasta noodles, such as rigatoni or ziti
14 - 1 tablespoon fresh thyme leaves
15 - ½ cup vegan parmesan shreds, plus more for garnish
16 - Fresh minced parsley leaves, for garnish

# Steps to Follow:

01 - Place dehydrated soy curls in a bowl and cover with hot water. Soak for 8 to 10 minutes until softened, then drain and squeeze out excess water using a fine-mesh sieve or cheesecloth.
02 - Heat 2 tablespoons olive oil in a large sauté pan or Dutch oven over medium-high heat. Add soy curls and season with ½ teaspoon salt, ½ teaspoon pepper, and garlic powder. Cook for 8 to 10 minutes until golden brown and slightly crispy, then transfer to a plate.
03 - In the same pan, add remaining olive oil. Sauté diced onion, minced garlic, and mushrooms for 6 to 8 minutes until moisture is released and mushrooms start to brown.
04 - Sprinkle flour over mushroom mixture and stir to coat. Gradually add broth, nondairy milk, and marsala wine, stirring to avoid clumps. Season with remaining salt and pepper. Add uncooked pasta and thyme, stir well, bring to a boil, then reduce heat, cover, and simmer for 12 to 15 minutes until pasta is tender.
05 - Uncover and stir in vegan parmesan until melted and creamy. Return crispy soy curls to the pot and stir to combine.
06 - Garnish with fresh parsley and extra vegan parmesan. Serve immediately.

# Extra Tips:

01 - Sautéing the soy curls before combining adds a satisfying texture.
02 - Use dry marsala wine for best flavor balance and avoid overly sweet results.
03 - Adjust sauce thickness with additional broth or nondairy milk if needed.
04 - Check pasta for doneness a couple of minutes before end time to prevent overcooking.
05 - Use gluten-free pasta and flour to adapt this dish for gluten sensitivities.
