# Ingredients You'll Need:

→ Main Ingredients

01 - 2 cups cooked jasmine rice, preferably day-old
02 - 1 tablespoon vegetable oil
03 - 2 eggs, lightly beaten
04 - 1/2 onion, finely chopped
05 - 2 garlic cloves, minced
06 - 1/2 cup diced pineapple, fresh or canned
07 - 1/2 cup frozen peas
08 - 1/2 red bell pepper, diced
09 - 2 tablespoons soy sauce
10 - 1 tablespoon fish sauce
11 - 1 tablespoon oyster sauce
12 - 1 teaspoon granulated sugar
13 - 2 green onions, thinly sliced
14 - 1/4 cup roasted cashews
15 - 1/4 cup fresh cilantro, chopped
16 - Lime wedges, for serving

# Steps to Follow:

01 - Heat vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs and scramble until just set. Transfer to a plate and set aside.
02 - In the same skillet, add more oil if needed. Sauté chopped onion and minced garlic for 2 minutes until fragrant and translucent.
03 - Add diced pineapple, frozen peas, and red bell pepper. Stir-fry for 3–4 minutes until slightly softened.
04 - Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine with vegetables.
05 - Pour in soy sauce, fish sauce, oyster sauce, and sugar. Toss to evenly coat the rice mixture in sauce.
06 - Return scrambled eggs to the skillet and gently fold into the rice. Add roasted cashews, sliced green onions, and chopped cilantro. Serve with lime wedges.

# Extra Tips:

01 - Using day-old rice helps prevent clumping and results in better texture during stir-frying.
02 - Adjust seasoning to taste, especially the balance of soy, fish sauce, and sugar.
03 - Garnish with additional cilantro and lime juice just before serving for extra brightness.
