Creamy Bolognese with meat, wine, and cheese. Great for pasta or make-ahead meals.

# Ingredients You'll Need:

→ Sauce Base

01 - 2 tablespoons extra-virgin olive oil
02 - 1 cup finely chopped yellow onion
03 - 1/2 cup grated carrot
04 - 1/2 cup finely chopped celery
05 - 2 cloves minced garlic

→ Meat & Wine

06 - 1 pound ground beef and pork mixture
07 - 3/4 cup dry white wine

→ Cream Base & Seasoning

08 - 1 cup whole milk or heavy cream
09 - 1 pinch freshly grated nutmeg
10 - 1 teaspoon sea salt
11 - 1/2 teaspoon freshly ground black pepper
12 - 1/2 cup freshly grated Parmesan cheese

# Steps to Follow:

01 - Heat olive oil in a Dutch oven over medium heat. Add onion, carrot, and celery. Sauté for 7–8 minutes until translucent and soft.
02 - Add ground meat and cook over medium-high heat for 8 minutes, breaking up meat until browned and no pink remains.
03 - Pour in white wine and scrape up browned bits. Simmer 4 minutes until liquid reduces by half.
04 - Reduce heat to low and stir in milk or cream, nutmeg, salt, and pepper. Simmer gently for 35–45 minutes, stirring occasionally.
05 - Stir in Parmesan cheese until melted. Taste and adjust seasoning. Sauce should be silky and rich.

# Extra Tips:

01 - This sauce improves in flavor when made ahead and stored overnight.
02 - Freezes well up to 3 months; reheat gently and add a splash of cream if needed.
03 - Best served with wide or tubular pasta shapes to hold the sauce.
