# Ingredients You'll Need:

01 - 50 g toasted walnuts, chopped up
02 - 100 g creamy goat cheese, broken into pieces
03 - 1 ripe avocado, sliced up
04 - 100 g arugula or whatever salad greens you like
05 - 4 medium beets, cleaned and ends cut off

→ For the Vinaigrette

06 - Fine sea salt, just sprinkle it in as needed
07 - Freshly cracked black pepper, to your liking
08 - 1 teaspoon Dijon mustard
09 - 1 teaspoon maple syrup
10 - 2 tablespoons of red wine vinegar
11 - 3 tablespoons extra-virgin olive oil

# Steps to Follow:

01 - Toss your salad greens or arugula into a big bowl. Pour a little of the dressing on top and toss everything gently. Lay out those beet wedges, avocado slices, chunks of goat cheese, and toasted walnuts right over the greens. If it looks a bit dry, splash in more vinaigrette and give it a quick, gentle mix.
02 - While beets roast away, just dump olive oil, red wine vinegar, maple syrup, and Dijon right into a jar. Screw on the lid, then shake it up like crazy until it looks smooth and blended. Toss in some salt and pepper the way you like it.
