Sheet Pan Gnocchi Dinner (Printable Recipe)

01 - 1 pound store-bought potato gnocchi
02 - 1 bunch broccolini, trimmed and chopped into florets and ½-inch stem pieces
03 - 1 pint cherry tomatoes
04 - ½ small red onion, thinly sliced
05 - 2 garlic cloves, sliced
06 - 2 tablespoons extra-virgin olive oil
07 - ½ teaspoon sea salt
08 - ½ teaspoon fresh thyme leaves
09 - ½ teaspoon za’atar
10 - ¼ teaspoon red pepper flakes
11 - Freshly ground black pepper, to taste
12 - 6 ounces feta cheese, torn into 1-inch chunks
13 - Fresh parsley, for garnish (optional)

# Steps to Follow:

01 - Preheat the oven to 450°F and line a large rimmed baking sheet with parchment paper.
02 - In a large bowl, combine gnocchi, broccolini, cherry tomatoes, onion, garlic, olive oil, salt, thyme, za’atar, red pepper flakes, and several grinds of black pepper. Toss well to coat.
03 - Spread the mixture evenly on the prepared baking sheet. Roast for 10 minutes.
04 - Stir the gnocchi and vegetables. Scatter the feta cheese on top. Roast for another 15 to 20 minutes, or until the gnocchi is tender and the vegetables and feta are browned.
05 - Garnish with parsley if desired, season to taste, and serve immediately.
