Preheat peanut oil in a deep fryer or Dutch oven to 350°F. Place a wire rack over a sheet tray for draining fried shrimp.

In a large bowl, whisk together eggs, buttermilk, hot sauce, garlic powder, onion powder, creole seasoning, paprika, and black pepper. Add shrimp and toss to coat.

In a separate bowl, stir together flour, cornmeal, garlic powder, onion powder, creole seasoning, paprika, and black pepper until fully combined.

Remove shrimp from wet mixture, let excess drip off, then coat in the dry cornmeal-flour blend. Place coated shrimp on a plate.

Carefully lower shrimp into hot oil in small batches. Fry for 3 to 4 minutes or until golden brown and crispy.

Transfer fried shrimp to wire rack and immediately sprinkle with kosher salt. Repeat with remaining shrimp.
