Spiralized Beet Salad (Printable Recipe)

# Ingredients You'll Need:

→ Dressing

01 - 1/3 cup minced shallot (from 1 medium shallot)
02 - 1/4 cup extra-virgin olive oil
03 - 1/2 teaspoon freshly grated lemon zest
04 - 2 tablespoons fresh lemon juice
05 - 1/2 teaspoon salt
06 - 1/4 teaspoon ground black pepper

→ Salad

07 - 2 pounds beets, peeled and spiralized (3 to 4 medium)
08 - 1/2 cup slivered almonds, toasted
09 - 1/2 cup chopped fresh flat-leaf parsley

# Steps to Follow:

01 - In a small bowl, combine minced shallot, olive oil, lemon zest, lemon juice, salt, and pepper. Whisk thoroughly until emulsified.
02 - Clean and peel the beets. Using a spiralizer fitted with the thin blade, spiralize the beets and cut into approximately 3-inch lengths.
03 - Place the spiralized beets in a large bowl. Drizzle with the prepared dressing and toss until evenly coated.
04 - Just before serving, add toasted almonds and chopped parsley. Toss gently to combine.
