Sweet Chili Chicken Melt (Printable Recipe)

Crispy sandwich stuff with melty cheese, bulgogi chicken, sweet chili sauce, and fresh greens.

01 - 1 tablespoon vegetable oil
02 - 1 small onion, thinly sliced
03 - 1 tablespoon salted butter, softened
04 - 2 slices sturdy bread, such as sourdough
05 - 60 grams cheddar cheese, shredded or 1 slice, at room temperature
06 - 60 grams Monterey Jack cheese, shredded or 1 slice, at room temperature
07 - 60 grams cooked chicken or bulgogi chicken, sliced or shredded, kept warm
08 - 2 tablespoons sweet chili sauce
09 - 1 teaspoon toasted sesame seeds
10 - 1 tablespoon fresh basil, loosely packed and torn
11 - 1 tablespoon fresh cilantro, loosely packed and torn

# Steps to Follow:

01 - Heat vegetable oil in a frying pan over medium-high heat. Add thinly sliced onions and cook, stirring occasionally, for 7 to 10 minutes until deeply golden and caramelised.
02 - Spread softened butter evenly on one side of each bread slice. Place one slice, butter side down, onto a clean surface. Top with half of the cheddar and Monterey Jack cheeses, followed by the caramelised onions, warm chicken, sweet chili sauce, toasted sesame seeds, basil, and cilantro. Add the remaining cheese and cover with the second bread slice, buttered side up.
03 - Preheat a frying pan over medium heat. Carefully place the assembled sandwich in the pan. Grill for 2 to 4 minutes per side, pressing gently with a spatula, until the bread is crisp and cheese is thoroughly melted.
04 - Transfer sandwich to a cutting board. Allow to cool slightly, then slice in half and serve while warm.
