In a large bowl, combine mashed potatoes, mozzarella, Parmesan, 1 egg, garlic powder, and black pepper until fully incorporated.

Scoop about 1 tablespoon of the mixture and roll into balls. Repeat with remaining mixture and place on a tray.

Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Roll each ball in flour, dip in egg, then coat thoroughly with panko breadcrumbs. Return to tray.

Preheat air fryer to 375°F (190°C). Spray air fryer basket with oil. Arrange balls in a single layer and spray tops with oil.

Air fry for 10–12 minutes, shaking halfway through, until golden brown and crispy on the outside.
