Cook bacon pieces in a skillet over medium heat until crisp. Remove with a slotted spoon and drain on paper towels, leaving a thin layer of fat in the pan.

In the same skillet, cook ground beef and onion over medium heat, breaking up the meat, until beef is cooked through and onions are softened. Drain excess fat.

Reduce heat to low. Add bacon, tomato paste, Worcestershire sauce, mustard, and cream cheese. Stir until smooth and well blended.

Sprinkle cheddar over one half of each tortilla. Spoon beef mixture on top, fold tortillas into half-moons, and press lightly to seal.

Heat a clean skillet or griddle over medium heat with a light coat of oil or butter. Cook quesadillas until golden and crisp, 2–3 minutes per side. Rest briefly before slicing.
