Preheat oven to 350°F. Place chicken in a baking dish and coat with half the BBQ sauce. Bake for 20 minutes or until fully cooked. Let cool slightly and shred with forks. Mix in remaining BBQ sauce.

Spread butter on one side of each bread slice and arrange them butter-side down for easy assembly.

Layer a quarter cup of cheddar on four bread slices. Add chicken mixture, followed by three pineapple slices per sandwich. Top with more cheese and another slice of bread, butter-side up.

Heat a skillet over medium. Spray lightly with cooking spray and grill sandwiches two at a time for 3 to 4 minutes until golden. Flip carefully and grill 1 to 2 minutes more.

Cut sandwiches diagonally and serve immediately while the cheese is melted and the bread is crisp.
