Beef and Bean Burritos (Printable Recipe)

# Ingredients You'll Need:

01 - 1 tablespoon avocado oil
02 - 1 pound ground beef
03 - 1 teaspoon ground cumin
04 - 1 teaspoon chili powder
05 - ½ teaspoon paprika
06 - ½ teaspoon garlic powder
07 - ½ teaspoon dried oregano or Italian seasoning
08 - ½ teaspoon salt
09 - ¼ teaspoon ground black pepper
10 - 2 tablespoons tomato paste

→ For assembling the burritos

11 - 6 large flour tortillas
12 - 3 cups cilantro lime rice, cooked
13 - 2 cups lettuce, thinly sliced
14 - 1 cup corn, canned or frozen, thawed and drained
15 - 1 cup black beans, rinsed and drained
16 - 2 medium tomatoes, diced
17 - ½ medium red onion, diced
18 - ¼ cup fresh cilantro, finely chopped
19 - 1 cup Mexican cheese blend, shredded
20 - ¼ cup sour cream (optional)
21 - 1 lime, wedged (optional, for serving)

# Steps to Follow:

01 - Heat oil in a large skillet over medium-high heat for 2 minutes until the oil sizzles. Add ground beef and stir well to cook evenly until browned, about 6-8 minutes. Break up the beef into small pieces for even cooking.
02 - Add cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, and tomato paste to the skillet. Reduce the heat to medium and let the mixture simmer for 3-5 minutes, stirring occasionally. Turn off heat and set aside.
03 - On each tortilla, add 2-3 tablespoons of beef, ¼ cup cooked rice, lettuce, corn, black beans, tomato, onion, cilantro, and cheese in the center. Drizzle with sour cream and lime juice to taste. Fold up the bottom, fold the edges, and roll tightly to seal. Wrap each burrito in aluminum foil.
04 - Place the foil-wrapped burritos on a skillet or frying pan and heat over medium-high heat for 3-4 minutes on each side.
05 - Place the foil-wrapped burritos in a preheated oven at 350°F and bake for 20-25 minutes until warmed through and the cheese is fully melted.

# Extra Tips:

01 - To make ahead, prepare the burritos up to the step where they are wrapped in foil. Store them in the refrigerator for 3-4 days or freeze for up to 3 months.
02 - When freezing, omit the tomato and lettuce as they do not freeze well. For reheating, thaw overnight in the refrigerator before warming.
