Heat a skillet over medium-high heat. Cook the bacon for about 4 minutes per side until crispy. Transfer to a paper towel-lined plate and cover to keep warm.

In a bowl, whisk together eggs, milk, salt, pepper, and optional green onions. Set aside.

Spray a skillet with cooking spray and heat over medium. Pour in the egg mixture, cover with a lid for 1 minute. Flip the eggs as one piece and fold into a square.

Place a slice of cheese on top of the folded eggs, cover the pan, and turn off heat to melt the cheese with residual heat.

While cheese melts, toast the bagel halves until golden and crispy.

Spread mayonnaise or cream cheese if using. Layer with bacon and cheesy folded eggs. Assemble quickly while warm.
