Mix together the smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper in a small bowl. Set aside.

Wash and cut the potatoes into chips, then pat dry with paper towels. Place them in a large bowl, add 1 tablespoon of olive oil, and sprinkle with half the spice mix. Mix well to ensure even coating.

Spread the potato chips on a baking tray and bake in a preheated oven at 200°C (390°F) for 30–40 minutes, or cook in an air fryer for about 20 minutes, until golden and crispy.

Heat the remaining 1 tablespoon of olive oil in a frying pan over high heat. Add the beef mince, breaking it apart with a wooden spoon. Once browned, sprinkle with the remaining spice mix and cook until any excess moisture evaporates.

In a small bowl, combine mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Mix well and adjust seasoning to taste.

Divide the cooked potato chips among bowls. Add shredded lettuce, cooked beef mince, cheese, and pickle slices to each bowl. Drizzle burger sauce on top and serve immediately.
