Chicken Falafel Bowls (Printable Recipe)

01 - 1 package store-bought falafels
02 - 1 head romaine lettuce, chopped
03 - 1 large field tomato, diced
04 - 1 cucumber, diced
05 - 1 cup parsley, finely chopped
06 - hummus

07 - 1 cup sliced red cabbage
08 - 1 cup vinegar
09 - 2 tsp sugar
10 - 1 tsp salt

→ Garlic Sauce

11 - 1/2 cup unsweetened soy milk
12 - 1 cup sunflower oil
13 - 2 garlic cloves, minced
14 - 1 tsp lemon juice
15 - 1/2 tsp salt

→ Quick Chicken Shawarma

16 - 3 chicken breasts
17 - 1 tbsp olive oil
18 - 1 tbsp lemon juice
19 - 2 cloves garlic, minced
20 - 2 tsp turmeric
21 - 2 tsp cumin
22 - 1 tsp cinnamon
23 - 1 tsp nutmeg
24 - 1 tsp salt

# Steps to Follow:

01 - In a large bowl, mix together vinegar, sugar, and salt until completely dissolved. Immerse cabbage in mixture, and let sit at least 30 minutes before serving.
02 - Cut chicken breasts in half lengthwise. Marinate all ingredients for chicken shawarma together in a large plastic bag. Let sit at least 10-15 minutes.
03 - Preheat BBQ to medium-high heat and grill chicken for 5-6 minutes per side until cooked through. Alternatively, cook in a 400°F oven for 12-15 minutes until fully cooked. Let cool then slice.
04 - Blend all ingredients for vegan garlic sauce in a Magic Bullet, blender, or food processor. Blend for 10-15 seconds on high to emulsify and thicken.
05 - Add lettuce to each bowl, along with tomatoes, cucumber, parsley, pickled cabbage, falafels, and sliced chicken. Top with hummus and garlic sauce. Serve and enjoy.
