Combine warm water, instant yeast, and a teaspoon of sugar in a bowl. Let sit for 5–10 minutes until foamy.

In a large bowl, mix flour, remaining sugar, and salt until well combined.

Add beaten eggs, warm milk, melted butter, and yeast mixture to the dry ingredients. Mix until a rough dough forms.

Knead dough on a floured surface for 10 minutes until smooth and elastic.

Place dough in an oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled.

Punch down dough. Divide into 16 equal pieces.

Roll each piece into a rectangle. Spread softened butter in center. Roll tightly and seal seams.

Roll log to 12 inches and shape into a spiral coil. Place in greased mold or muffin tin.

Let shaped dough rise in a warm area for 30 minutes.

Bake at 325°F (165°C) for 20 minutes until golden. Cool on rack.
