Classic Ensaymada Bread (Printable Recipe)

# Ingredients You'll Need:

→ Dough

01 - 4 cups all-purpose flour, unbleached
02 - 2 1/4 teaspoons instant yeast
03 - 1/2 cup granulated sugar
04 - 1 teaspoon fine sea salt
05 - 3 large eggs, room temperature
06 - 1/2 cup warm milk
07 - 1/4 cup warm water
08 - 1/3 cup melted butter or margarine

→ Filling and Topping

09 - 1/2 cup softened butter or margarine for filling
10 - 1/2 cup unsalted softened butter or margarine for topping
11 - 3/4 cup granulated white sugar for dusting

# Steps to Follow:

01 - Combine warm water, instant yeast, and a teaspoon of sugar in a bowl. Let sit for 5–10 minutes until foamy.
02 - In a large bowl, mix flour, remaining sugar, and salt until well combined.
03 - Add beaten eggs, warm milk, melted butter, and yeast mixture to the dry ingredients. Mix until a rough dough forms.
04 - Knead dough on a floured surface for 10 minutes until smooth and elastic.
05 - Place dough in an oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled.
06 - Punch down dough. Divide into 16 equal pieces.
07 - Roll each piece into a rectangle. Spread softened butter in center. Roll tightly and seal seams.
08 - Roll log to 12 inches and shape into a spiral coil. Place in greased mold or muffin tin.
09 - Let shaped dough rise in a warm area for 30 minutes.
10 - Bake at 325°F (165°C) for 20 minutes until golden. Cool on rack.
11 - Brush cooled bread with soft butter. Roll or dip in granulated sugar.
12 - Serve warm with coffee or tea, or package for gifting.
