                Add cottage cheese, eggs, garlic powder, and Italian seasoning to a blender or food processor. Blend for 30 seconds until the mixture is smooth and lump-free.

                Line a sheet pan with parchment paper and spray lightly with non-stick spray. Pour the batter onto the pan and spread it evenly to 3/8 to 1/2 inch thick.

                Preheat the oven to 350°F (175°C). Bake for about 30 minutes until the edges are golden brown and the center is firm to the touch.

                Remove from the oven and allow to cool completely before slicing or rolling. The flatbread becomes more pliable as it cools.
