In a bowl, toss shrimp with lemon juice, olive oil, Cajun seasoning, garlic powder, smoked paprika, and oregano. Set aside to marinate.

Heat oil in a skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and opaque. Remove and set aside.

In the same skillet, melt butter and sauté diced onion for 5 minutes. Add salt, then pour in heavy cream and stir in flour slurry off heat.

Return pan to low heat. Add Cajun spices, return shrimp, and stir in Boursin cheese. Simmer for 5 minutes until smooth.

Cook penne in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining. Rinse pasta with cold water.

Add cooked pasta and reserved water to sauce. Simmer for 5 minutes to thicken and coat pasta evenly.

Taste and adjust seasoning. Serve hot with grated Parmesan, chopped parsley, and black pepper.
