01 - 1 lb Italian sausage, mild or spicy
02 - 1 small yellow onion, diced
03 - 3 cloves garlic, minced
04 - 4 cups low-sodium chicken broth
05 - 1 tsp Italian seasoning
06 - Salt and freshly ground black pepper, to taste
07 - 1 tbsp olive oil, if needed for sautéing

08 - 9 oz cheese tortellini, refrigerated or frozen

# Steps to Follow:

01 - In a large pot, cook the sausage over medium heat until browned and cooked through. Remove and set aside.
02 - In the same pot, sauté the diced onion until soft. Add olive oil if needed. Add garlic and cook for 30 seconds.
03 - Pour in the chicken broth and stir to deglaze the pot. Add Italian seasoning, salt, and pepper.
