07 - Breadcrumbs, for coating
08 - Vegetable oil, for shallow frying
09 - All-purpose flour, optional for dredging

10 - Fresh parsley, chopped

# Steps to Follow:

01 - Peel and grate potatoes using the coarse side of a box grater. Transfer to a large mixing bowl.
02 - Add salt, paprika, and black pepper to the grated potatoes. Mix thoroughly and adjust seasoning to taste.
03 - If the mixture feels wet, use a clean kitchen towel or cheesecloth to squeeze out excess liquid for crispier results.
04 - Incorporate cornstarch and beaten egg into the seasoned potatoes to bind the mixture.
05 - Set up shallow dishes with flour (optional), beaten egg, and breadcrumbs or panko for coating.
06 - Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot but not smoking.
07 - Shape mixture into patties, dredge in flour if using, dip in egg, and coat thoroughly in breadcrumbs.
08 - Fry patties in batches for 2–3 minutes per side or until golden brown. Drain on paper towels before serving.

# Extra Tips:

01 - Use starchy potatoes such as Russet for better binding and texture.
02 - For extra crispiness, double-dip patties in egg and breadcrumbs.
03 - Patties can be frozen raw and fried directly from frozen.
