Fiesta Chicken Crock Pot (Printable Recipe)

Chicken, corn, beans, and smooth cream cheese slow-cooked till tender. Bold flavors make dinner easy any evening.

01 - 4 chicken breasts, boneless and no skin
02 - 1 pouch of ranch seasoning powder
03 - 1 tsp black pepper, ground
04 - 1 tsp onion powder
05 - 1 can (284 g) diced tomatoes with chilies, not drained (Rotel)
06 - 1 can (425 g) corn, drained
07 - 1 can (425 g) black beans, rinsed and drained
08 - 225 g block of plain cream cheese
09 - 2 limes, squeezed
10 - 120 ml chicken stock

# Steps to Follow:

01 - Drop black beans, corn, then the diced tomatoes over chicken at the bottom of your slow cooker.
02 - Sprinkle pepper, ranch powder, and onion powder all over the top.
03 - Place the cream cheese right on top, then pour lime juice and chicken stock around it.
04 - Pop on the lid. Let it go for 3 to 4 hours set on high or 5 to 6 on low, till chicken is at least 74°C in the thickest part.
05 - Pull out those chicken pieces and use two forks to shred them, then pop the meat right back in.
06 - Blend it up so the cream cheese melts in. Dish it out hot however you like.
