# Ingredients You'll Need:

→ Noodle Base

01 - 340 grams spaghetti or rice noodles
02 - 1 tablespoon honey
03 - 1 tablespoon fish sauce (optional)
04 - 2 tablespoons soy sauce
05 - 60 milliliters lime juice
06 - 250 milliliters coconut milk
07 - 3 tablespoons red curry paste
08 - 2 garlic cloves, minced
09 - 1 tablespoon fresh ginger, minced
10 - 1½ bunches scallions, chopped
11 - 1 tablespoon extra-virgin olive oil

→ Stir-Fried Vegetables

12 - Salt and freshly ground black pepper, to taste
13 - 1 large carrot, peeled and shredded
14 - 2 cups purple cabbage, shredded
15 - 3 cups broccoli rabe, chopped
16 - ½ red onion, thinly sliced
17 - 1 tablespoon extra-virgin olive oil

→ Optional Garnishes

18 - Sesame seeds, to taste
19 - Chopped fresh cilantro, to taste
20 - ½ bunch scallions, chopped

# Steps to Follow:

01 - Drop the cooked noodles and stir-fried veggies right into your big pot of curry sauce. Mix them up so everything gets coated. Scoop it into bowls and top with cilantro, scallions, and sesame seeds if you want. Go ahead and dig in while it’s still steaming.
02 - Toss olive oil into a big pan and set it to medium. Start with the sliced onion; let it get soft and a little see-through. Grab your broccoli rabe and purple cabbage, toss those in next, and let them cook until they’re nice and tender. Last, add your shredded carrots, mix everything together, and sprinkle in some salt and pepper.
03 - Get a big pot of salted water boiling. Drop in those noodles—spaghetti or rice—let them cook following the package time for that just-right bite. Drain them well and set them off to the side.
04 - Now, add your red curry paste to the pot and give it about a minute. Pour in the coconut milk, lime juice, soy sauce, fish sauce if you’re using it, and the honey. Keep everything at a soft simmer over a gentle heat. Let it bubble while you tackle the noodles.
