Greek Chicken Stuffed Pitas (Printable Recipe)

Delicious pita pockets filled with tzatziki-coated rotisserie chicken, fresh avocado and red onion. Ready in 15 minutes!

# Ingredients You'll Need:

→ For the Tzatziki

01 - 2 cups plain non-fat Greek yogurt
02 - ½ English cucumber, peeled and thinly sliced
03 - 1 lemon, juiced
04 - 1 clove garlic, super finely chopped
05 - 1 tablespoon chopped fresh dill
06 - Kosher salt and freshly cracked black pepper, to taste

→ For the Stuffed Pita

07 - 2 cups shredded rotisserie chicken
08 - ½ cup tzatziki sauce
09 - ¼ red onion, thinly sliced
10 - 1 ripe Hass avocado, sliced
11 - 4 whole wheat pitas
12 - Kosher salt and freshly cracked black pepper, to taste

# Steps to Follow:

01 - Combine yogurt, cucumber, garlic, dill, and half of the lemon juice in a large bowl. Taste and adjust with salt, pepper, and additional lemon juice as desired.
02 - Toast the pita bread in a toaster, toaster oven, or oven for a few minutes until slightly crisp. Remove and set aside.
03 - In a large bowl, combine shredded chicken, tzatziki sauce, and red onion. Mix well and season with salt and pepper to taste.
04 - Divide the mixture into 4 portions. Stuff each pita pocket with the mixture and top with avocado slices.

01 - If watching carbs, use large lettuce leaves instead of pita.
