# Steps to Follow:

01 - Melt clarified butter in a large heavy-bottomed pot over medium heat. Add the diced onion and cook gently for 5–7 minutes until translucent and fragrant, stirring often.
02 - Stir in the chopped garlic and cook for 1 minute until aromatic, ensuring it does not brown.
03 - Add grated carrots and parsley roots. Sauté for 2–3 minutes to start softening.
04 - Add the chopped leek and diced potatoes, stirring well to evenly coat with the aromatic base.
05 - Pour in the warmed broth. Stir in turmeric, chili powder, salt, and pepper. Bring to a gentle simmer, cover, and cook for 15 minutes until the potatoes and roots begin to soften.
06 - Add the green beans to the simmering soup. Cover and cook for a further 10–15 minutes until the beans are tender yet still vibrant, checking doneness to avoid overcooking.
07 - Ladle a small amount of hot soup into a bowl with sour cream and whisk to temper. Gradually return this mixture to the pot, stirring constantly to create a creamy, smooth texture.
