Chicken Caesar Sandwich (Printable Recipe)

Tender grilled chicken, lots of parmesan, and fresh romaine with caesar-style sauce on soft brioche.

# Ingredients You'll Need:

→ Chicken & Marinade

01 - A pinch of black pepper, ground fresh, to taste
02 - Kosher salt, however much you like
03 - 2 garlic cloves, chopped up
04 - 1 tablespoon Dijon mustard
05 - 2 tablespoons olive oil
06 - 4 chicken breast fillets, skinless and boneless, sliced thin

→ Sandwich Fixings

07 - A few lemon wedges for squeezing
08 - Shredded Parmesan cheese, to sprinkle on top
09 - Crispy romaine lettuce
10 - 4 soft brioche buns

→ Caesar Spread

11 - 80 ml (about 1/3 cup) olive oil
12 - Juice from half a lemon
13 - 0.25 teaspoon pepper
14 - 0.25 teaspoon salt
15 - 1 teaspoon anchovy paste
16 - 2 teaspoons red wine vinegar
17 - 1 tablespoon Dijon mustard
18 - 2 tablespoons Parmesan, grated
19 - 3 tablespoons Greek yogurt
20 - 4 garlic cloves, smashed up

# Steps to Follow:

01 - Chuck garlic, Greek yogurt, Parmesan, mustard, vinegar, anchovy paste, salt, pepper, and some lemon juice into your food processor. Blitz it all up until smooth, then slowly pour in the olive oil while it's whirring away. Pop it in the fridge till you’re ready.
02 - Toss your chicken fillets in a bag or dish, pour the marinade over them, and make sure everything's coated. Cover it up and set in the fridge for at least half an hour. Leave it overnight if you want them extra tasty.
03 - Mix olive oil, Dijon, minced garlic, salt, and a little pepper in your bowl. Whisk like crazy until it comes together.
04 - Turn your grill nice and high. Let it get super hot for a good 10 or 15 minutes. You want those grill marks!
05 - Cut your brioche buns, place them face-down right on the grill. Toast till they're just golden on the inside.
06 - Move the chicken from the marinade (let it drip off a little) and lay it straight onto the hot grill. Sear both sides for 3–5 minutes (depends how thick they are), and check they're cooked through (should hit 74°C inside). Let them chill out on a plate for a bit — 5–10 minutes does the trick.
07 - Spread some Caesar dressing onto each bun. Top with lettuce, layer on your chicken, add another hit of dressing and give it a snowstorm of Parmesan. Squeeze on a little lemon if you like, slap the bun lid on, and eat up right away.

# Extra Tips:

01 - You can make the Caesar spread ahead and stick it in the fridge. Give it a quick stir before using if it looks separated.
02 - If you give the chicken a few minutes to rest before building the sandwiches, it'll stay nice and juicy.
